The vines of Château Isolette are cultivated with the greatest respect for the environment, limiting our input and interventions to just those strictly necessary. The wine-making cellar is located in the heart of the vineyard to limit travel and during harvest, to directly place the grapes inside the cellar to avoid oxidation. The differences in level between the grape reception and fermentation tanks allow us to drop a barely crushed grape into the tanks. Thus, as before, no pumping and no risk of spoilage.
White and Rosé are harvested at night or first thing in the morning, in the cool, in order to avoid any spoilage, then directly pressed in a pneumatic press and decanted in the cold. Vinification takes place at a regulated temperature and in stainless steel tanks.
When it comes to red wine, it is made in concrete tanks buried in traditional vatting, the shorter or longer length dependent upon the type of taste sought, with frequent pumping-over and unballasting for certain wines intended for ageing.
